The cane stalk is cut as close as possible to the ground because its lower sections contain the higest sugar content. The canes must be transported
as quickly as possible, because the sucrose begins to deteriorate as soon as it is cut. And in the intense Cuban heat, that process is speeded up

For the past 10 years, most of Cuban sugar has been grown on co-operative farms. Sugar cane harvesters work 24 hours a day - 7 days a week from December
to June to get the ripened product to refineries while the it is at it's peak sugar content
